Learn to make Panki - Quick Easy To Make Breakfast / Snack Recipe By Ruchi Bharani Chef Ruchi Bharani brings you a traditional Gujarati snack called panki with the aroma of fresh banana leaves. Panki is named so as its batter is cooked between the banana leaves. While pankis made with rice flour batter are most common, other variations are also prevalent. Ingredients: 1 cup rice flour 1/2 cup sour curd water as reqired 1 tsp ginger-chilli paste 1 tsp garlic paste (optional) 1/2 cup corriander leaves 2 tbsp oil 1/4 tsp hing 1/4 tsp haldi 1 packet eno fruit salt For spreading - Few banana leaves Method: To make the batter: - In a bowl, add the sifted rice flour, ginger chilli paste, garlic paste (optional), asafoetida, turmeric powder, oil, coriander leaves and yogurt and whisk all the ingredients together. - Add approx. 1 cup of water for the batter. The batter should be thick enough to spread on the banana leaf. - Add salt to taste. Also add the ENO fruit salt and mix well. - The batter is ready for the Panki. Let the batter soak atleast for an hour. To make panki: - Cut the banana leaves in a square shape. - Grease the leaves with little oil. - On a hot pan, keep the banana leaf (greased side on top) and spread 2 tbsp of the batter evenly over it. - Cover it with another banana leaf (greased side on the batter) - Let it roast on a low flame for about 1 and a half minutes on both sides. - Cook until you get a few brown spots on the panki. - The pankis will be done when the batter starts leaving the banana leaf. - Serve the pankis hot in the banana leaves along with coriander mint chutney. A beautiful and light steamed rice savoury pancakes. PANKI Ingredients 2 cups rice flour 1 cup yogurt A pinch asafoetida (hing) ¼ tsp turmeric powder A pinch of baking soda 2-3 green chillies, chopped 1 tbsp chopped fresh coriander leaves Salt to taste 1 tsp ghee 1 banana leaf, cut into 4 inch squares Oil for greasing Coconut chutney to serve Method 1. Heat sufficient water in a steamer. 2. Take yogurt in a bowl, add rice flour, asafoetida, turmeric powder, baking soda, green chillies, coriander leaves, salt and ½ cup water and whisk to form a smooth batter. 3. To make one panki, grease two banana leaves with oil, pour a small portion of the batter on one leaf and spread into a small disc. Cover with the other greased banana leaf on top with the oil side facing down. 4. Heat sufficient water in a steamer and place the pankis in the steamer basket and steam for 10-12 minutes. 5. Arrange the pankis on a serving plate and remove the upper banana leaf before serving. 6. Serve hot with coconut chutney. હેલો ફ્રેન્ડ્સ , આજે આપણે બનાવીશું એક ટ્રેડિશનલ ગુજરાતી વાનગી જેનું નામ છે પાનકી .આમ તો પાનકી ઘણી બધી રીતે બનતી હોય છે જેમ કે દાળથી , મકાઈ થી , ભાજી થી અને ચોખાના લોટ થી . આજે આપણે ઝડપથી અને ઘરમાં જ મળી રહે એવી સામગ્રીથી ચોખાના લોટની પાનકી બનાવીશું .આ ખુબજ ટેસ્ટી અને પોચી હોય છે સાથે એની સ્પેશિયલ ચટણી પણ બનાવીશું તો ચાલો આને બનાવાનું શરૂ કરીએ , તમને જો રેસિપી પસંદ આવે તો લાઈક અને શેર કરી નવા રેસીપી જોવા ચેનલને સબ્સ્ક્રાઇબ કરવાનું ના ભૂલતા. Urad dal flour helps to bind the panki batter and make very thin pankis. Serve the pankis hot from the griddle and let your guests peel off the banana leaves and enjoy the steaming hot pankis with spicy green chutney. Preparation Time: 5 minutes. Cooking Time: 8 minutes. Makes 10 pankis. 5 tbsp rice flour (chawal ka atta) 1 tbsp urad dal (split black lentil) flour 1 tsp curds (dahi) ½ tsp green chilli paste ½ tsp roasted and coarsely crushed cumin seeds (jeera) 1 tsp oil Salt to taste 2 banana leaves (kele ka patta) Oil for greasing For serving Green chutney 1. Combine the rice flour, urad dal flour, curds, green chilli paste, cumin seeds, oil, salt and ¾ cup of water and mix well. Keep aside. 2. Cut the banana leaves into a 75 mm. (3") diameter circle using a cookie cutter or with help of scissors. 3. Grease the banana leaves with a little oil and keep aside. 4. Place 2 greased banana leaves on a flat surface with the greased side facing upwards. 5. Put 1 tbsp of the batter on each banana leaf and cover each roundel with a greased banana leaf facing downwards. 6. Press it gently to spread the batter evenly to make a thin layer. 7. Heat a non-stick tava (griddle) and cook the panki on both sides till light brown spots appear on the banana leaves and the pancake in-between peels off the banana leaf easily. 8. Repeat steps 4 to 7 to make 9 more pankis. Serve immediately with green chutney. Handy Tip If you do not have a cookie cutter for cutting the banana leaves into circles, cut them in squares and proceed as per the recipe.

This easy to make Gujarati dish makes the perfect light and healthy evening snack or weekend breakfast. The Panki gets its name from the banana leaves or ‘paan’ used to cook it in, which steams this rice flour pancake without the need for an actual steamer. Panki is best served with Green Chutney or Fried Chillies. Subscribe so you NEVER miss a video: 🤍 Yields: 12-16 pankis | Prep Time: 20 minutes | Cooking Time: 7-10 minutes per Panki approx. Utensils required - Bowl for mixing - Spoon or whisk - Scissors to cut banana leaves - Frying pan - Spatula Ingredients: - Rice flour / चावल का आटा - 2 cups - Fine semolina flour / रवा - 2 tablespoons - Turmeric powder / हल्दी - ½ teaspoon - Coriander finely chopped / हरा धनिया - 2 teaspoons - Smooth yogurt / दही - 2 tablespoons - Salt / नमक - ½ teaspoon or to taste - Soda bicarbonate or eno / बेकिंग सोडा या ईनो - 1 pinch - Fresh dark green banana leaves / केले के पत्ते - 5-6 (depending on size) Method: - First, fold the large banana leaf in half along its stem and cut the stem out. Then cut the leaves into smaller pieces that will fit in your frying pan. Make sure you wipe down all your leaves so they are clean and do not have any water on them - Grease these cut leaves on the greener side and keep aside. Try to pick out the dark green for this dish as the light green leaves tend to make the batter stick. - In a mixing bowl add all the dry ingredients and mix together - Then start by adding the yogurt. Make sure you stir out any lumps from the yogurt beforehand - As you stir in the yogurt a dough will start to form. Begin to add in water a few spoons at a time to gradually thin the dough - When the dough is of a pouring consistency and thin enough to spread a fine layer stop adding water. It should look thinner than dosa batter but thicker than water - Once the batter is prepared you are ready to cook your panki - Keep your frying pan on low heat and place one cut banana leaf on it with the oiled side facing up. Do not grease the pan. The banana leaf will not stick. - Spoon the panki batter onto the centre of the leaf and spread gently with your spoon - Ensure you do not pour too much batter as this will spread more once you place the top leaf. Place the top leaf on the batter and press it down very gently - Once you have placed the top leaf you can turn the heat up to medium and let the panki cook until the leaf shrinks in size and starts to become darker and brownish. Then flip it over and let it cook on the other side - Once both the leaves have shrunk and become brownish your panki is ready! - Serve the panki warm with green chutney and fried chilies Panki is also highly customizable. Add in grated ginger, chillies, cumin or coriander powder depending on your own taste. Using this as your base you can put your own personal twist on the recipe! In fact, pankis get their name because they are made in a paan (leaf). The rawa and corn combination is used in a different way to make this novel snack, which is very healthy as it is steamed. And of course, it is extremely tasty too, with coriander and green chillies enhancing the flavour further. Preparation Time: 10 minutes Cooking Time: 25 minutes Makes 8 pankis Ingredients 1 cup grated sweet corn kernels (makai ke dane) 2 tsp oil salt to taste 2 tbsp finely chopped coriander (dhania) 1 tbsp finely chopped green chillies 2 tbsp semolina (rava) 1/4 cup besan (bengal gram flour) 16 banana leaves (kele ka patta) for cooking oil for greasing For Serving green chutney Method 1. Combine all the ingredients along with 2 tbsp of water in a deep bowl and mix well. 2. Apply a little oil on one side of each banana leaf and keep aside. 3. Put 2 tbsp of the batter on one half of the greased side on a banana leaf and spread it evenly. 4. Place another greased banana leaf with the greased side facing downwards over it and press it lightly. 5. Cook on a non-stick pan or a tava (griddle) till light brown spots appear on the leaves and the panki in between peels off the leaf easily. 6. Repeat with the remaining batter to make 7 more pankis. 7. Serve immediately with green chutney. Handy tip: 1. You can cook 3 to 4 pankis at one time on a tava.
